Walking down through the narrow winding pathways of the village of Pyles, I was overcome amidst the summer breeze by an intoxicating, indescribable aroma. I glanced into the steel gated veranda of the local prokanakara, Thea Marigoula and watched as she meticulously laid out rows of freshly picked herbs from her nearby perivoli. I stood unnoticed, mesmerized, while admirering her handiwork. Her arthritic hands still amazingly adept, seemed to work by themselves performing an age old technique of weaving, knotting and tying each bundle. Slowly she hung the herbs, bundle by bundle, until she created the most exquisite botanical canopy I had ever seen. Time stood still as I realized I could of been witnessing this very moment a hundred years ago, with very little difference.
The exhilarating synergy of the aromatic fresh rosemary, thyme, invigorating mint and earthy fascomelo, awakened and energized my body, while lightening my spirit, simply through infusing the air with her own blend of nature’s herbal incense.
NOTE: Since the time of ancient Greece, (about 1000 B.C.) rosemary was burned as incense to ward off the devil and protect the sick against infection.
